Bahaha! Funny stuff.
We’re settled in on the couch, watching the Oscars as I type this—are you watching? Of course I had to tune in to watch my boo Jeff Bridges!
Everyone looks so beautiful! I always like the red carpet fashion review almost as much as the awards themselves.
This afternoon, I took yet another walk! I met up with my bff Ellie, and we took her dog Mr. Wilson and my parents’ labradoodle Sugar on a long walk around the neighborhood. It was so good to catch up with Ellie. Living so far away from my best girlfriends has been really tough this last year, so I love any time that I get to spend with them, now more than ever.
After our walk, I headed back home and took a short nap with Ryan…it felt so good! Last week, when my stomach was hurting so badly, I felt like I really missed out on my sleep for a while, so it’s been nice to get a little rest.
The rest of the day included a trip to the grocery store (where we bought FIVE boxes of Girl Scout cookies…YES!), and a whole lotta relaxing. I also snacked on a big orange and a cup of Kashi crunch. Yum!
Around 6:30, we sat down for a delicious dinner:
Vegetable Frittata, and Kale, Walnut, and Beet salad.
So, so good! The frittata had a shredded potato crust, along with broccoli, red pepper, and cheese. Yum!
Question: what’s the one thing tastier than roasted beets?
Answer: roasted beets with goat cheese.
Of course, dinner was followed by some delicious Girl Scout cookies. I had a samoa, a tag-along, AND a do-si-do. Hey, they only come around once a year, right?

I LOVE roasted beets. I had some in my hand today at the store and put them back b/c i was already on produce overload!

I want to hop into the screen and eat with you guys! These treats look so good! I am definitely watching the Oscars right now, and I agree, the fashion is definitely one of the best (if not the best) parts!

OMG love roasted beets! I went to a restaurnt for dinner with my fam sat night and it was a roasted beet salad with goat cheese and dried apricots, I died and went to heave it was THAT good!

i wish they individually wrapped each GS cookie (although i guess that’s wasting a lot of plastic) bc having a row of em in the box is too tempting!
