Who Took the Sun Out of Sunday?

Hey guys!  Well, it’s Sunday, but we have no sun!  It’s pretty cloudy here, but at least it’s warm—60 degrees!  I’ll take it! It’s supposed to rain tomorrow, but then clear up and get sunny and warm later in the week.

This morning, I took advantage of the warmer weather and went on a speedy 3 mile run.  It’s exactly 1.5 miles to my high school from our house, so I’ve been running the same quick route for years…and my mom has been running it since they moved back to Shreveport, 30 years ago!  I guess when you find a route that works, you stick with it!

After my run, I took a quick, cold shower, and then we headed out for a delicious brunch.  We walked to George’s, which is nothing less than a Shreveport institution.  It’s just a good old-fashioned greasy spoon diner, but it’s the best!  We spent many a Sunday morning eating breakfast there when I was a kid, so it was fun to go back!

I had a classic breakfast: two eggs, over easy, hash browns (with LOTS of ketchup), and biscuits and jam (unpictured, but I had two), along with coffee.  Yum!! 

George’s is a few miles away from our house, so we worked up quite an appetite on the walk there! It was a tasty meal indeed, and now I’m stuffed.  I usually prefer to eat a lighter breakfast, like cereal or a smoothie, but sometimes a good old-fashioned breakfast like this just hits the spot!

OH! And Katherine said that she woke up with some cramps last night…could be a good sign that Sophie’s almost ready to come greet the world!  Keep your fingers crossed!

Primo Primavera

Hey y’all!  I hope your Saturday was a great one!

This afternoon, my mom, Ryan and I took a nice 3 mile walk, and then I set out on a run on my own—another 3 miles! I was tired, and was kind of slugging along, but it just felt SO good to be outside!  The sun was shining, and it was 60 degrees…it was just perfect!  I have to take advantage of the nice weather while we have it!

When I got home from my run, my mom was starting on dinner.  Pasta primavera was on the menu tonight—perfect for spring!

She got the recipe from Colleen Patrick-Goudreau’s The Vegan Table.  It was delicious—so many fresh veggies!

We enjoyed appetizers by the fire outside as the pasta cooked.  My mom had set out crackers and hummus, as well as this date appetizer.  This appetizer was so simple, but so delicious.  You take dates, and then stuff them with a hunk of parmesan cheese and a toasted walnut.  The flavors taste so great together…the perfect combination of salty and sweet.

Today is Katherine’s actual due date…but no baby yet!  Sophie, come out and meet us! We’re not as bad as you think!

Dinner was served with a Bruschetta of sorts—french bread slices topped with olive tapenade and tomatoes, as well as a spinach salad with red onions and pine nuts.

Taste the Rainbow went well today…largely because of my mom and her healthy cooking!
