Evening, folks! Monday is over!
My afternoon went by quickly—I cleaned and cleaned, vacuuming, mopping, and just generally straightening up for two hours. As I cleaned, the snow began to come down…NOOOOO!!!!
Luckily, it didn’t last for very long, and it didn’t seem to stick.
Around 5:00, I started prepping for dinner…this recipe was a keeper—so simple, and so delicious!!
Tropical Butternut Squash Soup
Ingredients
1 butternut squash, peeled, halved, seeds scraped out
1 lime
4 cups vegetable broth
1/2 13 oz. can coconut milk
1/8 tsp. cayenne pepper
salt, to taste
cilantro and lime zest, to garnish
Directions:
Place the butternut squash on a baking sheet, cut side up. Sprinkle with the juice of half of the lime, and bake at 350 degrees for about 45 minutes, until skin can be pierced easily with a fork:
Once butternut squash is cooked through, chop into smaller pieces. In a soup pot, combine the vegetable broth and squash. Bring to a boil, then reduce and simmer for about 20 minutes. With a submerging blender, blend until soup is smooth (you could also do this in a blender). Stir in coconut milk, the rest of the lime’s juice, cayenne pepper, and salt.
Serve garnished with cilantro and lime zest.

We enjoyed our dinner with some spring-y wine:
I’ve been digging vinho verde lately. This one was really crisp and bright.
This soup was SO good…really creamy. The flavors melded together really nicely, especially the sweet coconut milk and the tangy lime. Yum!
We served ours with a side salad, which meant…more fun with the spiralizer!
Ryan was able to document my spiralizing action tonight…some of the pics are a little blurry—sorry about that!

I switched out the blade I had been using for a new one for our radishes, which produced this pasta like spiral:
So pretty! I think I’m really going to enjoy this new toy (TWSS Lindsay!!)!
Well…it’s almost time for The Bachelor WTA episode. Are you ready to meet back up with the girls? It’s been way too long since we’ve seen Rozlyn’s pretty face, and Michelle’s CRAZY eyes. How long do you think it will be before she starts talking about wanting babies? Down, girl!

As a random closing note– do you ever look at the search terms that people used to get to your blog? I had a funny one today: “dirty newlywed questions.” LOL—I wonder if my blog answered their question? I’m betting not.

Yum-o! That soup just sounds like it tastes like the tropics. I almost bought that Vino — but I went with another brand, and ended up throwing it out. Next time I’ll try that one. Thanks for the recommendation!

That soup looks so good! I love butternut squash. We made your portabella burgers last night (even found raw cheddar at Sunshine) And, I made the wheatberry salad using a brown rice/quinoa combination and it worked great. I LOVE that spiralizer!!

We’re covered in snow in Toronto too! I love your photos. I recently got some shredding/slicing/grinding attachments for my Kitchen Aid, and I have been shredding up a storm! I made 2 squash soup last weekend (butternut, spaghetti and acorn), but this looks even better! It’s a must try for sure!

I loooooove vinho verde! And that soup looks ridic. I just got back from Thailand and they actually love pumpkin over there, so who knows, maybe they do a coconut and orange vegetable soup too! (They put coconut in everything. It’s a wonderful, wonderful place!)

maybe the google searcher’s question was “how to introduce some excitement into a marriage” & the answer is… SPIRALIZER! who knows, some people get a kick out of these things
