Hey guys! We’ve been running around town all day, taking care of errands and what not, and now I think we’re going to start packing up…there’s lots to do, so this post will have to be quick!
For lunch, Ryan, my mom, my sister and I headed to Earthereal for a delicious vegetarian lunch.
I ordered my favorite, combination soy and avocado tacos…sans cheese!
Katie and John make an AWESOME homemade veggie burger every other Thursday…unfortunately, the burgers aren’t vegan (they have cottage cheese in them). Everyone else at the table enjoyed them, though!

That is a humongous taco! Wow!! I have been craving veggie burgers and have just been too lazy to make my own up (and don’t like the ones I’ve tried from the freezer section that don’t cost $2 a patty or something crazy like that). You are my motivation

That taco looks explosively delicious. You know you’re eating real Mexican food when you need a fork just to eat a taco. Messy=Authentic.

Yum! I’m slow, I’m just now figuring out that you’re a vegan for a month! : ) I think vegans are insanely hardcore, I wish I had that kind of self-control and motivation! I guess I just appreciate the value in all foods, and enjoy them all, too! Kudos to you in “living the life” for a month! The eats look incredible! Mmm!
